About us

Dr. Monika FeketeCoffee Science Lab was founded by Dr. Monika Fekete. Monika is a bioengineer with a PhD in chemistry. Coming from Europe, she was impressed by the coffee culture in Australia, particularly in Melbourne. After five years as a  chemistry researcher at Monash University, Monika decided to combine her passion for science with her love of great coffee. Since then, she has collaborated on coffee science projects with high profile coffee professionals, such as former SCAA president and coffee chemist Joseph Rivera, specialty roasters Five Senses Coffee and Australian Brew Cup Champion Devin Loong. Inspired by an industry striving for perfection and the example set by successfully operating coffee analysis laboratories in the US, Monika has decided to set up the first independent coffee science laboratory in Australia.

Food and beverage industries around the world are taking advantage of 21st century technology and scientific expertise to  improve their products even further. In the US, coffee analysis laboratories have worked together with coffee businesses for the last 20 years, bringing the power of modern analytical techniques to every part of the coffee supply chain. Australian specialty coffee can’t afford to lag behind the international trends that will inevitably bring a scientific revolution to quality management approaches.

The modern laboratory technology we offer is fit not only for present, but future challenges as well. We strive to keep in line with the latest innovations in analytical equipment  and methodology.

I belive knowing the science behind why coffee taste so good is so important because it gives us the tools to not only make it taste better but more consistently. Monika helps us do this by ensuring the consistentcy of coffee through the Mythos and EK43 at The Bench Projects. She has also been vital in creating the perfect water and trials for my 2016 World Brewers Cup in Dublin, Ireland.
